Homemade Fruit Rollups!

Part of my mother’s day present included lots of new plants – including 2 flats of strawberries.  It’s be a while until we start picking them, but I wanted to share this fun recipe for a healthy, sweet fruit treat that kids will love (and it’s also 21 Day Fix approved!!).

INGREDIENTS
5 cups fresh fruit
1/2-1 Tbsp honey (optional)

DIRECTIONS
1. Preheat oven to 225.

2. Blend fruit and honey in blender until very smooth.

3. Pour mixture onto parchment lined baking sheets (I usually use 2) and spread until thin. You want it to be very even so it will cook evenly. Otherwise, you will have some dry parts and other burned parts!

4. Remove from oven when the rollups are not stick (about 2-3 hours). Let cool then slice and roll!

Homemade Organic Salsa

I’m about to let you in on a little secret… the world’s best salsa is actually homemade, organic, and way too easy.

I discovered this recipe from a friend about ten years ago.  (Wow, it makes me feel old to admit that.)  Matt and I had it at a party, and it was so good, we purchased a food processor for the express purpose of making this salsa.

It only has 5 ingredients and virtually no prep.  Prepared to have your mind and tastebuds blown.

Ingredients:

2 cans organic diced tomatoes (you could use fresh if you have them.  I’ve always made it this way, and you know what they say about an old dog)

3-4 organic green onions

1 bundle of organic cilantro

4-5 cloves of organic garlic (this is subjective.  Matt and I like a lot of garlic.  You could start with one and keep adding/tasting until you get to the garlic level you prefer).

1 organic jalapeno, seeded

Now here is where it gets amazing – because it’s just so easy.

Step 1 – Roughly chop the green veggies/peel the garlic and throw it all in the food processor.

Step 2 – Pulse for a few seconds until the veggies are all minced.

Step 3 – Add in the tomatoes.

Step 4 – Blend and taste.

You can keep adding garlic or jalapeno to get the taste you are looking for.  It does get tastier as it sits in the fridge, but that’s it!

How easy is that?  And the really cool part – it’s 100% 21 Day Fix approved – all natural, organic salsa that you can use to fill up a green container.  You can also use this salsa to make the dressing for my Taco Salad!

Next week, I’ll show you how to use your leftover salsa (if you have any!) to make some tasty guacamole!

Enjoy!

Homemade HEALTHY Movie Theater Popcorn

homemade healthy movie theater popcorn how to make

Throughout the course of making healthy changes to my diet, the one thing I’ve really missed is good popcorn. Last year for my birthday, my sisters got me an air popper, which is AWESOME, minus the fact that air popped popcorn tastes NOTHING like actual delicious, buttery movie theater popped popcorn.  In fact, as my husband would say, it tastes a whole lot like cardboard.

I did find one tasty recipe for Rosemary and Black Pepper popcorn, and it was good, but it wasn’t what I’ve been looking for and consequently, while I’ve done great resisting microwave popcorn, I’ve almost always caved and went for the artificially disgusting popcorn you can get from the movie theater… until now.

This past weekend, my daughter, my husband and I decided to have a Harry Potter movie marathon.  I volunteered to make popcorn.

They both groaned and requested a trip to the grocery store to buy a bag of movie theater popcorn.

I refused.

But instead of subjecting them to cardboard flavored popcorn, a quick google search revealed that I may, in fact, be able to make a good substitute at home.  With just a few modifications, here are the results:  Delicious movie theater butter popcorn, without all the unhealthy stuff – because really, popcorn in and of itself is not terribly unhealthy, it’s all the junk we add to it. And while this isn’t 21 Day Fix approved, it’s an ok cheat once in a while.  The secret is using Ghee (clarified butter) instead of regular butter, which makes your popcorn overly soggy and not tasty.

Ingredients:

1/2 cup unpopped popcorn

2 T. Coconut oil

1/4 cup melted ghee

Himalayan pink salt to taste

Directions:

Heat a saucepan over high heat – I used a 3 qt saucepan.  Melt coconut oil completely.  (You could use a different type of oil, but you won’t taste it.  I was wary, but the popcorn did not have a coconut flavor at all.)  Dump in 1/2 cup popcorn kernels and shake around in pan to coat them with the oil.  When one kernel starts to pop, cover your pan so you don’t end up with popcorn all over your kitchen.

When the popping stops, dump your popcorn into a bowl and drizzle with melted ghee.  Add salt to taste and enjoy.

Lasagna Soup

Lasagna Soup!

(Makes two servings – each serving has 1 red, 2 yellow, 1 green, and 1 blue)

Notes: I make the meatballs and pasta in advance, then make the broth. To make it easy to measure portions for the 21 Day Fix, I add them to the pan after the stew is prepared. It’s a little extra work, but it makes measuring easier. I also don’t add all the meatballs – I measure about 1 ½ cup into the stew, and then freeze the rest for next time.

Ingredients

1 1/2 cups Italian Meatballs (get recipe here!)

1 cup Fusilli pasta, cooked

2 T diced white onion

2 t minced garlic

1 8 oz can tomato sauce

2 cups chicken broth

2 T grated parmesan cheese

Handful chopped basil leaves

Handful chopped italian parsley

more salt and pepper to taste 1/2 c (minus 2 T)

shredded mozzarella cheese

chopped Italian parsley

Step by Step Directions

Add oil, onion, and garlic to the pot. Add a little salt and pepper to taste. Stir and cook until soft, 3-4 minutes.

Add chicken broth and tomato sauce.

Bring to a boil and add cooked pasta and cooked meatballs.

Turn down the heat and simmer 5-10 min or until warm.

Mix in Parmesan cheese, and fresh basil and parsley.

Top each bowl with a mixture of mozzarella cheese and parsley.

Italian Meatballs

1 pound ground 93/7 beef

1/2 pound ground pork

1/2 cup grated Parmesan cheese

2 large eggs

1/2 cup grated white onion

1 tablespoon minced garlic

1/4 cup chopped Italian parsley

1 1/2 teaspoons Kosher salt

1/2 teaspoon ground black pepper

To make the meatballs, mix all meatball ingredients by hand in a large bowl.  Roll mixture into bite size balls and place on foil lined baking sheet.  You can brown these on the stove top before baking them, or just bake them. I like to bake just because it doesn’t use up an oil serving.

Bake in oven for 15-20 min at 350.

How many meatballs are in one serving depends on how big you make them.  I measure out 3/4 of a cup and count these meatballs as 1 red serving.  There is a small amount of cheese and onions, but I unless I’m eating the whole batch of meatballs (which I’m not), I don’t stress about it too much.

I like to use these meatballs in my Lasagna Soup.  You can find the recipe for that here!

What is the 3 Day Refresh??

3 day refresh before after 3day detox clease beachbody cleanse three

You may have heard me talk about the Shakeology Cleanse before – it’s a great way to drop around 5 pounds in three days, following a mostly liquid diet, and you can read more about it here.  But as great as the results from the Shakeology Cleanse were, it wasn’t an ideal way to clean out your body and really detox.  Shakeology is an awesome product, but that isn’t what it was designed for.

Luckily for us, Beachbody saw what we were doing and knew we needed a better solution.  A healthy way to detox your body quickly, to safely lose weight, and even to jumpstart your weight loss results from one of our other awesome programs like the 21 Day Fix.  And so they created the 3 Day Refresh.

http://beachbodycoach.com/esuite/home/coachamyallen?bctid=3591210905001

I have done cleanses before, and they are hard.  But one of the things I love about this cleanse is that it isn’t strictly liquids.  It includes the best of every detox program I have heard from – Shakeology, tea, juice, clean eating, and supplements and it combines them all into an easy to follow program for three days that delivers amazing results.

I am in pretty good shape.  For the most part I eat clean and stay away from processed foods.  And because of that, I didn’t expect amazing results.  But what happened for me BLEW. ME. AWAY.

But before I share my results with you, let me tell you a little bit about how the refresh works.

3 day refresh meal plan

Each day, you wake up and get started with a cup of water followed by Shakeology.  You can add in fruit or eat it on the side.  Mid morning, you can have a cup of tea and you drink Fiber Sweep, a supplement designed to gently clean out your insides.

For lunch, you drink Vanilla Fresh, a specially designed protein drink with more protein than Shakeology and vitamins specifically geared to sustain your body during the cleanse.  You also get to have a veggie serving and a healthy fat.  Mid afternoon, you can drink another cup of tea along with an afternoon snack, another veggie or a fresh juice – I chose the juice option and it was the perfect amount of sweet to keep me going.

For dinner, it’s another shake along with a dinner option – a little more than just veggies – and you can accompany that with veggie broth if you need just a little more.  Post dinner, you have the option of one more cup of tea.

Each day you follow the same routine, but since there are multiple food options, you can change it up some what.  I made a video diary of each day I followed the refresh, how I felt, what I ate, and what I did.  Here are the videos –

If you are curious about exactly what comes in your kit, check out this video where I show you exactly what you get.

Exercise is optional during the three days.  By the end of three days, I felt great but there were times when I felt weak, so listen to your body.  My results were little to light exercise on two days.

One thing I added to my refresh was a daily detox bath.  I have long believed in detox baths and I thought it would be relaxing and hopefully intensify my results.  Each day I did a different one – I elaborate more on them in the videos, and I also plan to post about that later this week.

3 day refresh results 3day three detox cleanse after before

So after three days, here are my results – I was down three pounds AND I lost THREE INCHES in my waist alone.  My pictures aren’t amazing… but I am not sucking in… coming off a weekend in Vegas, I was pretty bloated from bad food.  But THREE INCHES????  I was in shock.  I measured multiple times because I was sure that I was wrong.  My main waist measurement went from 29.5 inches to 26.5 inches.  In three days.

Screenshot 2014-07-07 18.05.23

These are my skinny jeans and my skinny top.  The one I never wear because it’s too small… and it fit.  And beyond that, the way I felt?  Amazing.

Want to try it for yourself??  Visit www.getfixedwithAmy.com to order – right now you can get it for just $10 with your Shakeology order and I can’t imagine a better deal than that.

21 Day Fix: Weekly Meal Plan #2

Ok, I’ll be honest – the first week of the 21 Day Fix didn’t go exactly the way I planned…  Love the meal plan, love shakeology, love the workout and love my little portion control containers… but even with all that, life happens.  I spent most of my week in the car driving back and forth to funerals, which is not what I was expecting to do this week.  But life happens and you do the best you can, and the next week, you don’t quit!!  You make a new plan and keep going!

21 Day Fix Asian Salad with Homemade Asian Dressing

21day fix asian salad with vinagrette 21 day

After living in Japan for three years, I love all foods Asian.  It’s the number one thing I miss about living in Asia.  And while the Japanese are pretty healthy as a culture, some of my favorite foods aren’t.  This salad is a great way for me to get my Asia fix with out sacrificing taste!

21 Day Fix Asian Salad (Serves 1)

Container Checklist: 2 green, 1/2 purple, 1 orange

Ingredients:

  • 1 1/4 cup organic butter lettuce
  • 1 cup celery, chopped
  • 3/4 cup pears, peeled and chopped
  • 1/4 cup Green Onions
  • 1 Tbsp mixed seeds (pumpkin and sunflower)
  • 1 Tbsp homemade Asian Vinaigrette (recipe posted below).

Toss first five ingredients then drizzle with vinaigrette. It’s kind of any ugly salad, it’s mostly green, but it sure is tasty!

Asian Vinaigrette (Serves 6)

  • 1/4 cup 100% orange juice
  • 1/4 cup rice vinegar
  • 2 TBSP reduced sodium soy sauce
  • 2 tsp raw honey
  • 1/2 inch fresh ginger,peeled & finely grated
  • 1/4 cup sesame oil

Combine orange juice, vinegar, soy sauce, honey and ginger in a medium bowl. Whisk to blend.  Slowly add oil while whisking, mix well.  Store in refrigerator, covered.  If it thickens when cold, hold it at room temp for 30 minutes and shake well before using.

21 Day Fix: 1200 Calorie Week Long Meal Plan

I love the portion control concept of the 21 Day Fix.  It’s clear and straight forward, and my even challengers who have had difficultly following a meal plan before are having success with weight loss by following the easy portion control concept.

I’ve been following the meal plan for almost two months now and it’s one of the easiest plans I’ve ever followed – I love having a list of acceptable clean, whole foods to eat, and I love the accountability of writing down everything I eat each day.  This is the first time I’ve kept a food log and I’ve really noticed if I’m writing it down, I won’t cheat.

But it’s hard to keep coming up with original ideas of what to eat every day, so I thought it would be helpful to my challengers and anyone doing the 21 Day Fix if I shared a copy of my week long meal plan each week.  So here is my Week One Meal Plan.  This is what I plan to eat for the week and while I expect I won’t be perfect, I’m going to do my best.

I know that’s hard to read so here is a pdf file that you can download:

I’ve also provided links for the recipes that are already on my blog and plan to add more over time until they are all available.

On a side note, I did my first official 21 Day Fix workout tonight and WOW.  That’s all I can say.  I am already sore and it kicked my booty.  Can’t wait to see what this program has in store for me!  Stay tuned for my week one update next Monday along with a new meal plan and more recipes!
